Thai Green Barramundi

Ingredients

  • 2 Australian Barramundi fillets
  • 1/2 cup Green curry paste
  • 1 cup Coconut Milk
  • 1 Green capsicum, thinly sliced
  • 250g Green beans, top & tailed
  • 1 Lemon, juiced
  • Salt
  • Pepper
  • Olive Oil

Method

  1. Preheat oven to 180°C, line the tray with baking paper.
  2. Mix green curry paste, coconut milk, lemon juice, salt, pepper
  3. Add ingredients to the tray and cover with green curry sauce.
  4. Bake in the oven for 25 minutes and serve with lemon wedge.
