Oven Steamed Barramundi with Lemon Mushroom

Served over fluffy rice, enjoy tender Australian barramundi fillets oven-steamed en papillote with buttery mushrooms, fresh lemon slices, and garlic

Oven Steamed Barramundi with Lemon Mushroom

Ingredients

  • 2 fillets of Australian barramundi
  • 1/2 lemon, sliced
  • 250g mushrooms, sliced
  • 2 tsp minced garlic
  • 50g butter, cubed
  • 1 ½ cup of rice, cooked
  • Salt
  • Pepper

Method

  1. Preheat oven to 180°C.
  2. Line baking tray with aluminum foil then baking paper on top.
  3. In center of baking paper place barramundi, mushrooms then top with lemon, garlic and butter.
  4. Season with salt, pepper then fold aluminum and baking paper to create a wrapped parcel around the barramundi.
  5. Oven steam for 25 mins and cook rice per packet instructions.
  6. Open carefully to serve on top of a bed of rice.
