Oven Steamed Barramundi and Harissa Beans

Tender Australian barramundi fillets meet creamy cannellini beans, zesty diced tomatoes, and a kick of harissa paste. Wrapped and oven-steamed to lock in moisture and flavour, this recipe is a heartwarming meal for any season.

Oven Steamed Barramundi and Harissa Beans

Ingredients

  • 2 fillets of Australian barramundi
  • 250g cannellini beans
  • 4 sprigs of parsley chopped
  • 50g butter, cubed
  • 200g diced tomatoes can
  • 2 tsp harissa paste
  • Salt
  • Pepper

Method

  1. Preheat oven to 180°C.
  2. Line baking tray with aluminum foil then baking paper on top.
  3. In center of baking paper place barramundi, beans then top with tomatoes, harissa paste, parsley and butter.
  4. Season with salt, pepper then fold aluminum and baking paper to create a wrapped parcel around the barramundi.
  5. Oven steam for 25 mins and open carefully to serve.
