Oven Steamed Barramundi and Harissa Beans
Ingredients
- 2 fillets of Australian barramundi
- 250g cannellini beans
- 4 sprigs of parsley chopped
- 50g butter, cubed
- 200g diced tomatoes can
- 2 tsp harissa paste
- Salt
- Pepper
Method
- Preheat oven to 180°C.
- Line baking tray with aluminum foil then baking paper on top.
- In center of baking paper place barramundi, beans then top with tomatoes, harissa paste, parsley and butter.
- Season with salt, pepper then fold aluminum and baking paper to create a wrapped parcel around the barramundi.
- Oven steam for 25 mins and open carefully to serve.
