Lemon Butter Barramundi with a Walnut Crust
Ingredients
- 1 portion barramundi fillet, skin off
Lemon garlic butter:
- 2 cloves garlic, finely minced
- 1 tbsp butter
- 1/2 cup walnuts, crushed
- Zest of 1 fresh lemon
- Salt & pepper to taste
- 1 tbsp parsley
Method
- Preheat oven to 180 degrees C.
- Combine all lemon garlic butter ingredients together and cover barramundi fillet on both sides.
- Bake at 180C for 20-30mins until golden brown. Serve with a side salad or roasted veg for a perfect finishing touch
