Barramundi with Peas and Feta

Ingredients

  • 260 grams barramundi skin on
  • 2 cups frozen peas
  • 1 handful coriander, chopped
  • 4 sprigs mint, leaves picked
  • 2 sprigs spring onion, chopped
  • 75g feta, crumbled
  • 1 lime, zested & juiced
  • Olive oil
  • Salt
  • Pepper

Method

  1. Heat oil in large pan, high heat. Season both sides of barramundi with salt and pepper. Cook until golden brown, about 4 minutes on each side, until it’s cooked through then set aside.
  2. Heat oil in the same pan, medium heat. Add peas, coriander, spring onion, lemon zest, lemon juice, cook 3 mins. Crumble feta cheese.
  3. Serve barramundi and peas hot add mint, feta and olive oil when plating.
