Barramundi with Peas and Feta
Ingredients
- 260 grams barramundi skin on
- 2 cups frozen peas
- 1 handful coriander, chopped
- 4 sprigs mint, leaves picked
- 2 sprigs spring onion, chopped
- 75g feta, crumbled
- 1 lime, zested & juiced
- Olive oil
- Salt
- Pepper
Method
- Heat oil in large pan, high heat. Season both sides of barramundi with salt and pepper. Cook until golden brown, about 4 minutes on each side, until it’s cooked through then set aside.
- Heat oil in the same pan, medium heat. Add peas, coriander, spring onion, lemon zest, lemon juice, cook 3 mins. Crumble feta cheese.
- Serve barramundi and peas hot add mint, feta and olive oil when plating.
