Barramundi with Creamy Lemon Sauce
Ingredients
- 2 filets barramundi skin on
- 1 bunch of broccolini
- 3 garlic cloves, sliced
- 300ml cooking cream
- 2 tbsp parsley, chopped
- 1 lemon, zested & juiced
- 1 tsp paprika
- Olive oil
- Salt
- Pepper
Method
- Heat oil in large pan, high heat. Season both sides of barramundi with salt and pepper. Cook until golden brown, about 4 minutes on each side, until it’s cooked through then set aside.
- Heat oil in the same pan, medium heat. Add garlic, broccolini, paprika, lemon zest and juice, saute for 3 minutes. Remove broccolini, set aside.
- Heat oil in the same pan, low heat. Add parsley, salt, pepper and cooking cream to pan on low heat and simmer for 3 mins.
- Serve barramundi and broccolini hot with sauce poured over.
