Baked and Dressed Barramundi with Greens

Australian barramundi fillets baked with a savoury-sweet dressing of soy sauce, sesame oil, white vinegar, olive oil, maple syrup, and sesame seeds. Served alongside charred greens, fresh spring onion, and coriander for added brightness.

Baked and Dressed Barramundi with Greens

Cook time 30 minutes

Ingredients

  • 1kg Australian Barra

Dressing:

  • 2tbsp soy sauce
  • 1tbsp toasted sesame oil
  • 1tbsp white vinegar
  • 2tbsp olive oil
  • 3tsp maple syrup
  • 1tsp sesame seeds

Sides:

  • 2 bunches bok choy, sliced lengthways
  • Olive oil
  • 4 garlic cloves, crushed
  • 2 red long chillies, sliced
  • 500g baby spinach

Garnish:

  • Spring onion, sliced
  • Coriander

Method

  1. Preheat oven to 180 degrees.
  2. Place barramundi skin side down, in a baking dish lined with baking paper. Place all dressing ingredients in a jar and shake well. Using a pastry brush, brush the dressing over the fish then pour the rest over the top, spreading it evenly.
  3. Bake for 20mins, then turn the oven off and leave the fish in the oven for another 5mins to rest.
  4. Meanwhile, steam bok choy for 5mins then brush with olive oil and grill in a hot pan until lightly charred. Transfer to a serving bowl.
  5. In a saucepan set over medium heat, heat 3tbsp olive oil and add garlic, chilli and baby spinach. Cook, stirring until the spinach is wilted. Transfer to a serving bowl.
  6. Remove fish from oven and serve in the baking dish or gently transfer to a serving platter. Top with sliced spring onion and coriander.
