Barramundi: The breakfast boost you didn’t know you needed
They say breakfast is the most important meal of the day, and what you eat for breakfast sets the tone for the day ahead.
Aside from boasting high levels of omega-3 fatty acids (which lowers blood pressure, reduces joint inflammation, helps nourish brain and eye function and helps to prevent a long list of medical conditions including dementia and asthma), swapping out your standard piece of peanut butter toast and coffee for an Aussie barramundi brekky is an option you might not have considered, but enough can’t be said for a piece of Aussie barra making an appearance on your breakfast plate.
With its neutral, light flavouring, it’s easy to incorporate Australian Barramundi into your breakfast without sacrificing all the good bits like bacon, avocados and FLAVOUR!
AND before you start telling us how you’re already strapped for time in the morning and barely get time for a coffee - this entire recipe goes in the air-fryer!
Ingredients

1 barramundi fillet

1 egg, whisked

2 rashers of bacon
-
1 cup of rocket

2 tbsp sunflower oil

1 tsp of honey
-
1 burger bun/breakfast muffin/large tortilla

2 tbsp mayo
-
1 tbsp sriracha
-
Salt to season
Method

Coat barramundi lightly in oil, honey and salt.

Place barramundi and bacon into the air fryer and cook for 13 minutes at 180c.

Whisk egg in a small bowl and microwave on high heat for 30-second increments until cooked.

Spread mayo and sriracha onto bread of choice.

Add bacon, egg, barramundi, and rocket to bread.
